Our Ice Wine is crafted from our own Estate grown fruit at Double River Ranch. A small portion of one of our high tier blocks is left at a low yield until late in the season to insure optimum ripeness, intense fruit flavors and the appropriate sugar level at harvest time.
The frozen clusters are handpicked in ice cold conditions at a brix of 48 degrees. The berries are then slowly pressed and carefully fermented with a special yeast strain for about 3-4 weeks. A slow fermentation at cool temperatures is achieved to bring out vibrant fruit characteristics. After fermentation is complete it spends precious time in French oak for 20-22 months to mature to perfection.
